Evergreen in Council Bluffs and/or Fort Dodge and Grand Pastures in Iowa City are your options for the starting point. You will need to complete a job with the "Live Pigs" Cargo from two of the three. Live Pigs will not spawn as an available cargo unless you have at least one point in the Fragile Cargo skill.
