The albino deer has an extremely rare chance of spawning in place of a common deer. However, there is an easier method to encounter one. Simply progress through Gerlinde Jäger's side missions in the Hirschfelden Hunting Reserve until you reach mission #10. In this mission, you will be required to harvest an albino deer that spawns in a specific area highlighted on the map.
