Easiest way in my opinion is to play with any player against Mvemba A Nzinga (Kongo)
The reason is that Kongo has not any faith bonuses neither can build religious districts.
When you start the game just spam faith buildings and when you have plenty of faith points start purchasing missionaries to convert his cities.
For even easier win, choose the game on settler difficulty and rich start on resources.
