I don't think this achievement persists in cross-progression.
Here's the easy way I did it:
In the lobby, change the gamemode and go onto the discovery tab.
I think all of the maps that work Solo or Solo/Party (marked Course) are race maps, but I could be wrong.
If the map says 'race to the end', you've found the right type of map.
Simply get near the finish line, stop, do an emote, then go to the end. I don't think it matters if you play the whole emote or not.
You can also get it in regular modes but that'll be much more difficult as you're competing against others.
