Hey guys, I’m currently going through this game. Here’s a small tip.

To unlock professional, you need to finish the game in Veteran Difficulty first.

However, There’s a trick and a recommendation. Finish the game in amateur in under 5 hours and unlock the infinite rocket launcher.

Then, go to the online and find anyone that is playing with professional difficulty. If you join their game and quit immediately, you will have professional unlocked.
