Either you get really dominant in normal play with long races enabled and a poor second racer. Or you do it in single race mode where Harry Chapman driving for Steinmann Racing in the WMC can easily win by that much in long race mode. You will probably need to sabotage your second driver so she doesn't come in second. I won by 80 seconds my first attempt.
