This is easiest achieved on the second level. Use the default pistol and just aim for the head. There are more than enough of the standard zombies on this level that if you accidentally kill a zombie by any other means other than a headshot, you can start again.
Take your time and make sure that both you and the zombie you're aiming at are on even ground.
