Start a new game as Catherine de Medici (France) using Pangea as the Map as this has more land mass then most of the other map types. Make sure you have the "No Barbarians" option checked as well, otherwise things get a little messy.
When you start, use both your Warrior and Settler to scout rivers that are close to the Wine resource and is at least 4 tiles long. Once you've found both of these requirements, settle a city.
Focus your tech research on Irrigation, as you need this in order to build Plantations, and your Civic research on Humanism which you need to build a Châteaux. The Civic research will take some time, so in the meantime, build a Builder unit. Once you've researched Irrigation, build a Plantation on the Wine research with your Builder; this is the first part of the achievement done.
Once you've researched Humanism, build a few more Builder units, clear any woods or rainforests on tiles that are adjacent to the river that are within your city borders and build a Châteaux on them. Once you've built five, the achievement will unlock.
