You'll find the evolution tree in the upper part of the Ancient Woods (Teal Green Area). You'll need a catalyst or matching item you level up specific monsters. Luckly one of the people by the tree gives you some clay that you'll be able to evolve one of your monsters. I have so far found catalysts from fighting monsters and looting chests.
