This can be done on any enemy that you can actually "kill." Using a knife to take down Jack momentarily while you are roaming the main house, for example, doesn't count.
The easiest enemies to kill with the knife are the giant bugs in the Old House. There are a few of them flying around, and their big enough that they are easy to kill with a knife without having to swing around like a crazy person.
