    Finish the game on hard, Simple.

    Guide for if you don't get THE NORMAL AND EASY ACHIEVEMENT after finishing the game on HARD.

    Lot of achievements are broken in this game.
    Save just before you beat the final boss on Hard

    You can save anytime during the final battle, so save just before you beat him so it's quicker to do. (Sekto)

    Start a NEW game on hard then load your save beat the boss again it should unlock both easy and normal achievements.
